The harvest has begun! From 11 March, at first light in the morning, we go out to ‘pull up’ asparagus.
Two curiosities: the harvest is all done by hand! For the white shoots, we help ourselves with a special knife, the gouge, which is planted in the ground near the shoots to be harvested, at an appropriate angle, taking care not to damage the neighbouring growing shoots. It is best to try to remove the shoot completely, taking it off the rhizome to which it is attached without damaging the other buds. The shoots are then placed in baskets or crates and transported by hand to the sides of the asparagus house.
