In the last two/three weeks, temperatures have gone from winter to almost summer and, in the fields, there has been a veritable explosion of asparagus.

While it is true that, in season, the word ‘production’ is associated – on a daily basis – with quintals of asparagus popping up, production varies every year. On what, then, does the production trend depend?

Some factors are related to human intervention: proper fertilisation in the preceding summer, for example, helps the plant to sprout more shoots. Others are entirely fortuitous, such as weather conditions.
